Easy Vegetarian Fried Rice

Asian-style Fried Rice: Vegetarian and Gluten-Free (Easy to make vegan!)

Total Time: 15 minutes (if the rice is already cooked)

Servings: 4-5 portions

Fried rice, to me, is comfort food. However, in fast-food chains such as Thai express or even in restaurants, it’s often full of sodium, oils and hardly ever vegetarian (or vegan). So why not make it yourself? It’s the simplest recipe ever, you only need few ingredients, and everyone always loves it. Plus, you can easily make this recipe vegan by simply not adding the eggs! I also like to double the recipe and make some extra fried rice since it stays tasty when you keep it in the fridge and heat it up for the week’s lunches.

-2 tbsp sesame oil

-1 clove garlic or 1 teaspoon garlic paste

-2 eggs

-1 small red onion

-4 cups cooked rice (brown or white)

-1 teaspoon finely cut ginger or ginger paste

-3 tbsp soy sauce

-Vegetables of your choice: corn, peas, green beans, baby spinach, broccoli, bell pepper, mushrooms, carrots…

-1 block extra-firm tofu; for more taste, you can marinate it in soy sauce and squeezed lemon juice for 12 hours beforehand (or you can buy smoked tofu, which tastes amazinnnng).

-Optional ingredients: basil (dried powdered or fresh), fresh chives, sesame seeds, roasted peanuts, tamari sauce…

Transformation time!

-Cook the rice

-Cut the veggies and tofu, and prepare the other ingredients (because once you start frying you can’t really stop!)


-Heat 1 tbsp of sesame oil in a frying pan (medium heat) with the garlic, ginger and onion. Stir.



-Add 1.5 tbsp soy sauce, then add the veggies that take longer to cook (such as carrots, broccoli and bell pepper) and stir; I prefer them crunchy, so I only cook them for about 3 to 5 minutes.


-Then, add the vegetables that take shorter to cook (such as mushrooms) and the tofu.



-Scramble the eggs in a small frying pan. Then, in the biggest frying pan that you have, or in a large casserole, add the rest of the sesame oil and a bit more soy sauce and start to fry the rice.





-Add both frying pans’ mixes to the rice, turn the heat up and start frying everything together! Don’t stop stirring/mixing or the rice will stick to the casserole.



-Serve immediately (:
