Easy Delicious Fried Rice

Asian-style Fried Rice: Vegetarian and Gluten-Free

Time: 15 minutes (if the rice is already cooked)

Servings: 4-5

Fried rice, to me, is comfort food. However, in fast-food chains such as Thai express or even in restaurants, it’s often full of sodium, oils and hardly ever vegetarian (or vegan). So why not make it yourself? It’s the simplest recipe ever, you only need few ingredients, and everyone loves it. Plus, you can make this recipe vegan by simply not adding the eggs!

(I am sorry for the images’ qualities; I took the pictures while travelling in Europe, which proves my point that it’s an easy meal to cook on the road!)

Ingredients

-2 tbsp sesame oil

-1 clove garlic OR 1 teaspoon garlic paste

-3 eggs

-1 small onion

-4 cups cooked rice (brown or white)

-1 teaspoon ginger paste

-3 tbsp soy sauce

-Vegetables of your choice: corn, peas, green beans, baby spinach, bell pepper, mushrooms, carrots…

-Optional: 1 block extra-firm tofu; for more taste, you can marinate it in soy sauce and squeezed lemon juice for 12 hours beforehand.

-Optional ingredients: basil (dried powdered or fresh), sesame seeds, roasted peanuts, tamari sauce…

Transformation time!

-Cook the rice if it isn’t done yet

-Cut the veggies and tofu, and prepare the other ingredients, since once you start frying you can’t really stop!

-Heat 1 tbsp of sesame oil in a frying pan (medium heat) with the garlic, ginger and onion. Stir.

-Add 1.5 tbsp soy sauce, then add the veggies and stir; I prefer them crunchy, so I only cook them for about 1-2 minutes. (Add the tofu at the same time, if you choose to use it.)

-If you have one large frying pan, add the rest of the oil to the mix, add the eggs and cook them scrambled. In the same pan, add the cooked rice and stir well. / If you have two medium pans, like when I took those pictures, add the rest of the oil to another frying pan and cook the eggs there, then transfer the vegetables to the eggs’ pan and use the other one (with the sauce from veggies) to fry the rice.

-Add the rest of the soy sauce to the large pan, as well as other optional ingredients. / If you were using two pans, mix both pans’ mixes in a larger casserole to finish.
