DELICIOUS Gluten Free and Dairy Free PANCAKES!

AMAZING Gluten Free and Dairy Free Pancakes! (That can easily be made vegan)

Yields: 15 small-sized pancakes

Who doesn’t loooove pancakes? We all do!! And being gluten intolerant or celiac, or lactose intolerant or allergic to dairy doesn’t remove our right to eat beautiful, fluffy, tasty pancakes. So here is an amazing recipe of gluten-free and dairy-free pancakes which can be made vegan by replacing the eggs with chia egg replacement or any other replacement. This recipe was inspired by the amazing cookbook Good Without Gluten.

Ingredients

-1.5 cups (of 250 ml) gluten-free flour mix (I like to use the brand Robin Hood, see picture below)

-4 tbsp coconut sugar (which is healthier than white sugar)

-A pinch of salt

-2 teaspoons baking powder

-1 teaspoon baking soda

-2 cups plant-based milk (I like to use vanilla almond milk)

-2 eggs

-2 tbsp organic coconut oil (melt it in the microwave before measuring) (you can also replace it by any other oil or vegan margarine)

-Vegan margarine for cooking/frying the pancakes

Transformation time!

-Mix the dry ingredients first: flour, sugar, salt, baking powder, bicarbonate of soda

-In a different bowl, mix the milk and eggs, then add the coconut oil

-Add the wet mixture to the dry one

-Mix well until the mixture is homogeneous

-Heat a frying pan to medium heat, melt a tiny bit of margarine, and pour in a ladleful of the pancake mix

-Let it cook until it bubbles start to form

-Then, gently flip it using a spatula

-Repeat with the remaining batter, serve with maple syrup and lots of fresh fruit!
