Gluten Free Carrot Cake with Chocolate Frosting

Homemade Carrot Cake with Chocolate Frosting: Gluten Free and Dairy Free!

Preparation time: 15-20 minutes

Cooking time: 35-40 minutes

The typical thick slice of carrot cake with a thin layer of chocolate frosting takes me right back to Brazil, where you can find “bolo de cenoura com calda de chocolate” at any local “lanchonete”. Except this time, the cake is gluten-free and dairy-free; it is also very easy to make and delicious to eat! So please yourself and your friends by baking this treat that can be enjoyed in a party or eaten as a snack. I hope you like it!

Ingredients for the cake

-3 cups gluten-free flour mix OR rice flour (I like to mix 1.5 cup whole rice flour with 1.5 white rice flour)

-2 cups brown sugar OR coconut sugar

-2/3 cup oil (I use coconut oil)

-3 organic eggs

-3 medium carrots

-1 tbsp baking powder

-A pinch of salt

-Optional for those who have an extra sweet tooth: Add 1 tbsp. stevia powder OR 2 tbsp maple syrup to the mix

Ingredients for the frosting

-150 g dairy-free dark chocolate (I use Lindt 70%)

-2 tbsp almond or soy milk

Transformation time!

-Preheat the oven to 180 C / 350 F

-Clean the carrots and chop them in small pieces

-Put the flour and the salt in a large bowl

-Mix in a blender or Vitamix the sugar, oil, eggs and carrots until it becomes homogeneous

-Add the wet mix to the dry one in the bowl and mix it well with a big spoon until the mixture becomes homogeneous

-Add the baking powder to the it and mix some more

-Spread margarine or melted coconut oil on a large baking pan with the help of a napkin, then evenly sprinkle a bit of white rice flour on the pan

-Add the mix to the pan and spread evenly

-Leave it in the oven for 35-40 minutes

-While you are waiting for the cake to bake, add the ingredients for the frosting to a bain-marie (over a double boiler). For the bain-marie (double boiler), fill 1/5 of a saucepan with water and leave it on medium heat. Add the ingredients to a cooking bowl and leave the bowl over the boiling water at medium heat (keep gently mixing) until the desired point; the chocolate should be melted and mixed with the milk.

-Take the cake out of the oven, and let it cool down before spreading the frosting on it
