Amazing Eggplant Lasagna

Preparation time: 15 minutes

Cooking time: 35 + 15 minutes

Serves: 4 portions

According to Dale Pinnock, the Medicinal Chef, eggplants are great for nervous system health, since there is a compound in its skin which is though to ‘protect the fatty coating of nerve cells from damage’, as he stated in his book. Therefore it can be very healthy to make this recipe a few times a month, since it’s a delicious way to eat this healthy vegetable!

This recipe is so simple and easy to make, it’s perfect if you’re preparing a dinner for friends and family. Even though this recipe is vegan, I guarantee that everyone will love it! Plus, you can personalize it by adding your favorite ingredients (like spinach or kale or more cheese…). If you look at the pictures of the final product, you’ll see I did one with cheese, and one without cheese and more spinach.

Ingredients

-2 medium eggplants

-3 tbsp of olive oil, a pinch of salt, a pinch of salt and pepper

-2 teaspoons paprika

-1/2 onion

-2 cloves of garlic

-1/2 cup groundless beef

-1 finely cut zucchini

-1 teaspoon garlic powder

-1 tbsp gluten-free (or not) bread crumbs

-1 cup tomato sauce

-1/2 cup spinach

-Optional: 1/3 cup vegan cheese, or Parmesan or Mozzarella

Transformation time!

-Heat the oven to 180 C / 350 F

-Cut the eggplant in about 1 cm / 0.4 inch slices (or thicker)

-Cover a baking pan with aluminium paper and spread a bit of olive oil on it

-Spread the eggplant slices on the pan, then add the olive oil, salt, pepper and paprika, and put it in the oven

-Leave it for 35 minutes until it’s cooked and golden, then take it out of the oven and let it cool

(But don’t turn off the oven)

-Sautée the onion, finely cut garlic, garlic powder and paprika. Then, add the zucchini and the groundless beef. Stir for a few minutes, and add the tomato sauce.

-Start the lasagna layers! Here’s how it goes: 1) the sauce mix you just made, 2) eggplant slices, 3) spinach, 4) bread crumbs, 5) the sauce mix again, 6) Cheese, if you want.

-Repeat this three or four times, depending on the depth of your pan.

-Leave it in the oven for about 10-15 minutes
